Our Perfect Serve Collection is all about drinking well, staying classy and having a good time doing it. To celebrate this, we've asked six bars across the country to each spend one weekend with us for the next six months. They'll be taking over our Instagram from Thursday to Saturday, and showing us how it's done here in Australia.
Next up, we'll be spending a few days with Archie Rose in Sydney, from Thursday 7 to Saturday 9 September.
Archie Rose operates as a distillery open to the public, with a full cocktail bar operating 7 days a week. Whether you're taking one of their blending classes where you can tailor make your very own gin to take home, or kicking back and enjoying a local gin and tonic, each experience is just as rewarding. They stock a variety of spirits, from small local products to rare and exclusive, and have a program on their menu called ‘Bartender of the Month’ that recognises an individual for their accomplishments and fine cocktail-making skills. The program helps promote other venues around Australia, encourages creative thinking, and inspires their bar team and customers alike.
Archie Rose's current distillery collaboration with Japanese tattoo artist Horisumi, based in Surry Hills, has seen their production team develop a series of limited release gins. These delicious products are based on the seasons, and feature different botanicals influenced by Japanese ingredients.
We spoke to the Venue Manager, Jonathan Liu, to find out more about this special gem in Sydney's bar scene.

How did you become a bartender and how long have you been doing it?
I was raised in Newcastle and moved to Sydney at 18 to find something different. 10 years later, I'm still loving it.
What do you love most about your job?
Service – delivering an experience that encourages guests to have fun and feel comfortable.
Archie Rose has a large offering ranging from our own spirits, beers, cocktails, wines and more spirits! On top of tours of the distillery and Gin Blending classes, our venue can be quite overwhelming. That's why the challenge of making everyone feel welcome is the most rewarding part of the job.
Describe your bar in three words.
Striking, inspiring, comfortable.
What’s your signature cocktail?
Nuclear Daiquirye: Overproof Archie Rose White Rye, Yellow Chartreuse, Lime, and Farlernum.
What’s your favourite spirit to mix cocktails with, and why?
Archie Rose Distiller’s Strength Gin 52.4%. We use botanicals such as elderflower, honey, rose, and pear, which are softer than traditional botanicals. The extra ABV really makes the spirit come through when used in classic cocktails such as the Negroni.
What do you think is the key to a great cocktail?
Balance - aroma, flavour, mouthfeel, finish.
What’s your #1 tip for a cocktail lover?
If you want a martini as soon as the bar opens then go for it, anyone doubting you is just jealous they can’t join the fun!
What’s your favourite thing about the Australian bar scene?
The Australian bar scene has grown rapidly over the last decade and with that, a very supportive community of industry professionals have emerged. If you can ask your competitors how they go about their days and have them share insights, you already know the Australian bar scene is a happy place.
